Ingredienser
6 l Aquafaba - cooking broth from e.g. chickpeas, yellow peas, white beans, etc
3 kg Breadcrumbs
2 kg Cornstarch
12 kg Cauliflower, in florets
10 kg Broccoli, in florets
250 g Herb salt
1 l Rapeseed oil
Gör så här:
Clean and cut the vegetables into pieces
Steam the vegetables for about 2 minutes and let cool
Whisk cornstarch with the aquafaba in a large bowl
Bread the vegetables in the aquafaba and then in the breadcrumbs
Place on a greased baking sheet
Bake and fry in the oven at 200 degrees for about 15–20 minutes
Season with salt
