A perfect way to turn leftovers into a delicious and sustainable meal. Use leftover potatoes, meat, or vegetables and create a classic Swedish dish with minimal food waste!
4 boiled potatoes (or leftover roasted potatoes)
200 g (7 oz) leftover meat (e.g., cooked chicken, meatballs, pork, or sausage)
1 yellow onion
1 dl (½ cup) leftover vegetables (e.g., carrots, bell pepper, peas)
1 tbsp butter or oil
Salt & pepper to taste
1 tsp Dijon mustard (optional, for extra flavor)
1 tbsp chopped parsley (optional)
4 fried eggs (for serving)
Pickled beets (for serving)

Dice the potatoes, meat, and vegetables into small cubes
Finely chop the onion and sauté in butter/oil in a large frying pan until soft
Add the potatoes and fry over medium heat until they develop a crispy, golden surface
Stir in the meat and vegetables and cook until everything is heated through and slightly caramelized
Season with salt, pepper, and optional Dijon mustard
Top with chopped parsley and serve with fried eggs and pickled beets
