Of all the food waste that is thrown away in Sweden, food waste at restaurants accounts for about 6%. In 2018, each guest threw away an average of 7 kilos of food on their restaurant visits, and a total of 73,000 tonnes of food waste was generated from restaurants in Sweden.
Waste in restaurants occurs both in the kitchen and during serving. Partly it is difficult to predict how many guests will come but also to prepare the right amount of food. A real culprit is a self-picking buffet, something we usually advise restaurants against. The first step to succeeding in waste management for a restaurant is to create increased awareness among staff and guests.
