Ingredients
About 800g of pumpkin
Rapeseed oil
Salt & pepper
Creme fraiche
Lime
Honey
Steps:
Peel and cut the pumpkin into fine pieces.
Mix the pumpkin bits with rapeseed oil and salt.
Roast the pumpkin at 180-200°C for approx. 10-15 min.
Allow the pumpkin to cool and place it on a salad plate with other salad accessories.
Top with roasted pumpkin seeds, freshly ground black pepper, a little olive oil, and a splash of vinegar.
Or serve with whipped crème fraiche flavored with honey, lime zest, and juice.
Tip! Feel free to roast the pumpkin with a little honey, but then be prepared to lower the temperature or shorten the time so you don't burn the pumpkin.
